Diabetic Fluffy Cranberry Orange Waffles

Fluffy, crisp-edged waffles infused with orange zest, nutmeg, and cranberry, then finished with cranberry jam, vegan butter, and maple syrup for a festive sweet-tart breakfast.

Ingredients
  

Cranberry Jam
  • ½ cup fresh cranberries sliced in half
  • 1 tbsp sugar
Waffle Batter
  • cups all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • Pinch of salt
  • ½ tsp nutmeg
  • 1 flax egg: 1 tbsp ground flaxseed mixed with 3 tbsp water
  • 1 tsp vanilla extract
  • cups non-dairy milk such as coconut milk
  • 2 tbsp orange juice about the juice of ½ an orange
  • Zest of 1 orange
For Cooking & Serving
  • Grease for the waffle iron
  • Remaining cranberry jam
  • Vegan butter
  • Maple syrup

Method
 

  1. Make the Cranberry Jam: In a small saucepan over medium-low heat, combine the halved cranberries with 1 tbsp sugar.
    Cook for about 5 minutes, stirring occasionally, until the cranberries soften and the mixture comes together into a jam-like consistency. Remove from the heat and set aside.
  2. Preheat the Waffle Iron: Preheat your waffle iron according to the manufacturer's instructions.
  3. Combine the Dry Ingredients: Sift the flour, remaining 2 tbsp sugar, baking powder, salt, and nutmeg into a medium-sized bowl. Make a well in the center of the dry mixture.
  4. Add the Wet Ingredients: Pour the flax egg, vanilla extract, non-dairy milk, orange zest, and orange juice into the well. Mix the wet and dry ingredients together until just combined; avoid overmixing.
  5. Add the Cranberries: Stir half of the cooked cranberry mixture into the batter until the cranberry is evenly distributed throughout.
  6. Cook the Waffles: Lightly grease the heated waffle iron and add about ⅓ cup of batter. Cook according to your waffle iron's instructions; the original recipe cooks each waffle for about 5 minutes.
  7. Finish the Waffles: Transfer the cooked waffles to a serving plate and top with the remaining cranberry jam, vegan butter, and maple syrup.
  8. Serve Immediately: Serve the waffles while they are fresh and warm.

Notes

  • Cook the cranberries over medium-low heat so they soften gradually.
  • Stir the cranberry mixture occasionally as it cooks to help it develop an even, jam-like consistency.
  • The flax egg is made by mixing 1 tbsp ground flaxseed with 3 tbsp water before adding it to the batter.
  • Mix the wet and dry ingredients only until combined to help keep the waffles fluffy.
  • Reserve half of the cranberry mixture for serving; the other half is folded into the batter.
