Easy Keto Blueberry Cobbler

A warm, fruit-filled blueberry cobbler topped with a golden pecan-and-almond crumble—simple to prepare, wonderfully textured, and especially delicious served hot.

Ingredients
  

Blueberry Filling
  • cups blueberries
  • ¼ cup granulated monk fruit sweetener
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • ½ teaspoon xanthan gum
Nutty Crumble Topping
  • ¾ cup pecans
  • ¾ cup almond flour
  • 3 tablespoons monk fruit syrup
  • 2 tablespoons ghee or coconut oil
  • ¼ teaspoon xanthan gum
  • teaspoons lemon juice
  • ¼ teaspoon sea salt

  • 9 × 9-inch baking dish, cast-iron skillet, or smaller ramekins
  • Medium mixing bowl

Method
 

  1. Preheat the Oven: Preheat the oven to 375°F. Grease a cast-iron skillet or a 9 × 9-inch baking dish.
  2. Prepare the Filling: Add the blueberries, granulated monk fruit sweetener, lemon juice, vanilla extract, and xanthan gum to a medium bowl. Mix thoroughly until the blueberries are evenly coated.
  3. Transfer the Filling: Pour the prepared blueberry mixture into the greased 9 × 9-inch baking dish, or divide it among smaller ramekins.
  4. Make the Crumble: Place the pecans, almond flour, monk fruit syrup, ghee or coconut oil, xanthan gum, lemon juice, and sea salt in a food processor. Pulse until the ingredients form a crumbly topping.
  5. Add the Topping: Distribute the crumble mixture evenly over the blueberry filling, covering the surface.
  6. Bake the Cobbler: Place the dish in the preheated oven and bake for 25–30 minutes, or until the topping is golden brown.
  7. Serve: Serve the cobbler hot, optionally with a scoop of dairy-free ice cream.

Notes

  • For a crunchier topping, increase the pecans by ½ cup.
  • Granulated monk fruit sweetener can be replaced with coconut sugar.
  • Monk fruit syrup can be substituted with honey.
  • Replace ½ teaspoon xanthan gum in the filling with 1 teaspoon tapioca flour if preferred.
