Flavorful Mediterranean Rice

A colorful, fragrant one-pot rice dish featuring fluffy basmati rice, fresh vegetables, lemon, oregano, and thyme, finished with parsley, green onion, and lemon zest.

Ingredients
  

  • 1 tablespoon olive oil
  • 1/2 cup diced yellow onion
  • 2 cloves garlic finely minced
  • 1 cup basmati rice
  • 1/3 cup diced red bell pepper
  • 1/3 cup diced green bell pepper
  • 1 3/4 cups water
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 2 –3 sprigs fresh thyme
  • 1/2 teaspoon kosher salt or to taste
  • 2 tablespoons chopped parsley
  • 2 tablespoons sliced green onion
  • 2 teaspoons lemon zest

Method
 

  1. Rinse the Rice: Place the basmati rice in a fine-mesh strainer and rinse it thoroughly under cold running water until the water runs clear. Set the rice aside to drain.
  2. Sauté the Onion: Heat the olive oil in a medium-sized pot over medium heat. Add the diced yellow onion and sauté for 6–8 minutes, or until the onion becomes translucent.
  3. Cook the Garlic: Add the finely minced garlic to the pot and cook for 1 additional minute. Turn off the heat.
  4. Combine the Ingredients: Add the rinsed and drained rice to the saucepan along with 1 3/4 cups water, 1/2 teaspoon kosher salt, diced red and green bell peppers, lemon juice, fresh thyme sprigs, and dried oregano.
  5. Simmer the Rice: Bring the mixture to a simmer, then cover the pot with the lid. Cook for 10 minutes, or until most of the water has been absorbed.
  6. Finish Steaming: Turn off the heat and leave the covered rice on the hot cooking element with the heat off, allowing it to finish steaming.
  7. Remove the Thyme: Remove the woody thyme stems from the cooked rice and discard them.
  8. Fluff and Garnish: Gently fluff the rice with a fork, then garnish with sliced green onion and lemon zest.
  9. Serve: Serve the Mediterranean rice while warm and enjoy.

Notes

  • Basmati rice is the preferred choice for this recipe, but another variety can be used if cooked according to its package directions.
  • Rinse the rice under cold running water until the water runs clear to prepare it before cooking.
  • Fresh lemon, garlic, and herbs provide the best flavor in this dish.
  • The rice needs a short resting period over the hot element after the heat is turned off so it can finish steaming.
  • Remove the woody thyme stems before serving.
  • For a rice-cooker version, sauté the onion and garlic first, then transfer them to the rice cooker with the rice and remaining ingredients and cook according to the manufacturer’s directions.
