Paleo Blueberry French Toast Bake

A quick, dairy-free French toast bake made with soft bread, wild blueberries, maple syrup, vanilla, cinnamon, and a simple egg-and-oat-milk custard. Perfect for an easy breakfast or meal prep.

Ingredients
  

  • 4 slices bread of choice halved
  • 2 eggs
  • cup oat milk
  • 1 –2 tablespoons maple syrup
  • 2 teaspoons vanilla extract
  • ¼ teaspoon salt
  • ¼ teaspoon cinnamon
  • cup wild blueberries

Equipment

  • 8×8-inch baking dish
  • Medium mixing bowl
  • Whisk
  • Measuring cups and spoons
  • Oil spray

Method
 

  1. Prepare the Oven and Dish: Spray an 8×8-inch baking dish with oil and preheat the oven to 375°F.
  2. Make the Custard: In a medium bowl, whisk together the eggs, oat milk, salt, cinnamon, maple syrup, and vanilla extract until combined.
  3. Coat the Bread: Dip each halved slice of bread into the egg mixture, making sure it is coated, then arrange the pieces in the prepared baking dish.
  4. Add the Blueberries: Stir the wild blueberries into the remaining egg mixture, then pour the blueberry mixture evenly over the bread in the baking dish.
  5. Bake the French Toast: Bake at 375°F for about 30 minutes, or until the liquid has been absorbed and the bake is set.
  6. Serve: Enjoy the blueberry French toast bake warm.

Notes

  • Use your preferred type of bread; the recipe works with 4 slices, halved.
  • The oat milk keeps the bake dairy-free while contributing to the soft, custardy texture.
  • Maple syrup can be adjusted between 1 and 2 tablespoons according to your preferred level of sweetness.
  • Coat each piece of bread with the egg mixture before arranging it in the baking dish so the bread absorbs the custard evenly.
  • Add the wild blueberries to the remaining egg mixture, then pour everything over the assembled bread.
  • The bake is ready when the liquid has been absorbed after about 30 minutes in the 375°F oven.
