Paleo Tender Red Wine Braised Pot Roast

A hearty Dutch oven pot roast slowly braised in red wine, brandy, broth, herbs, garlic, onions, and carrots, finished with a caramelized crust and served with rustic garlic mashed potatoes.

Ingredients
  

For the Pot Roast
  • 1 3–4 pound beef chuck roast
  • Salt and black pepper as needed for seasoning
  • 2 tablespoons flour
  • 1 yellow onion thinly sliced
  • 6 cloves garlic chopped
  • 2 cups carrots largely chopped
  • 2 tablespoons tomato paste
  • 2 cups red wine
  • 1/2 cup brandy or cognac
  • 2 cups broth
  • 2 bay leaves
  • 2 tablespoons chopped fresh thyme
  • 1/2 cup fresh parsley
For the Mashed Potatoes
  • 1 pound small to medium potatoes
  • 2 tablespoons salted butter
  • 1/2 cup milk or cream cheese at room temperature
  • 1 teaspoon garlic powder
  • Flaky sea salt
  • Black pepper

Method
 

  1. Preheat the Oven: Preheat the oven to 325°F.
  2. Season and Flour the Roast: Place the beef chuck roast in the bottom of a large oven-safe Dutch oven. Season it with salt and black pepper, then rub the flour evenly over the roast to coat it.
  3. Add the Aromatics and Vegetables: Arrange the thinly sliced onion, chopped garlic, and largely chopped carrots around the roast.
  4. Prepare the Wine Mixture: Stir the tomato paste into the 2 cups of red wine until combined.
  5. Build the Braise: Pour the red-wine and tomato-paste mixture over the roast. Add the brandy or cognac, broth, bay leaves, and fresh thyme to the Dutch oven.
  6. Add the Potatoes: Arrange the small to medium potatoes around the roast in the Dutch oven.
  7. Braise the Roast: Cover the Dutch oven and place it in the 325°F oven. Roast for 3 1/2 to 5 hours, or until the beef is very tender.
  8. Increase the Oven Temperature: Raise the oven temperature to 425°F once the initial braising is complete.
  9. Prepare the Mashed Potatoes: Remove the potatoes from the Dutch oven and place them in a bowl. Add the salted butter, room-temperature milk or cream cheese, garlic powder, salt, and black pepper.
    Mash until well combined. The original method leaves the potato skins on; season the mashed potatoes with additional salt and pepper as needed.
  10. Caramelize the Roast: Return the roast to the oven uncovered at 425°F and cook for 20 minutes, until the top is deeply caramelized.
  11. Maintain the Braising Liquid: If needed during the final cooking stage, add additional broth or wine so the onions remain just barely covered.
  12. Finish and Serve: Serve the pot roast topped with flaky sea salt, gravy, and carrots, with the mashed potatoes served alongside. Garnish with the fresh parsley and enjoy.

Notes

  • Roast tenderness: The chuck roast should be cooked until very tender. The source allows a braising time of 3½ to 5 hours, so use tenderness as the main indicator of doneness.
  • Flour coating: Rubbing the roast with flour before adding the braising liquid helps create a richer cooking liquid.
  • Wine and brandy: Red wine provides the main depth of flavor, while brandy or cognac adds additional richness to the braise.
  • Vegetable size: Keep the carrots largely chopped so they hold their shape during the long cooking process.
  • Potato skins: The original method leaves the potato skins on when mashing, giving the potatoes a rustic texture.
  • Final caramelization: Cooking the roast uncovered at 425°F for 20 minutes develops a deeply caramelized surface.
  • Braising liquid: If the onions become exposed during the final stage, add broth or wine as needed to keep them just barely covered.
